Collard Greens! mmmmmm

Collard greens are a staple in Southern Cooking.  Traditionally, collards are enjoyed on New Year’s Day along with black-eyed peas and cornbread to ensure wealth in the coming year.  Similar to kale, collard greens contain vitamin K, vitamin A and vitamin C.  Here’s an easy recipe to enjoy alongside your fried chicken!

Ingredients

12 thick cut hickory smoked bacon slices, finely chopped

2 medium size onions, finely chopped

1/2 pound smoked ham, chopped

5 garlic cloves, finely chopped

3 (32-oz.) containers organic chicken broth

3 lbs of fresh collard greens, washed and trimmed

1/3 cup apple cider vinegar

1 tablespoon sugar

1 teaspoon salt

3/4 teaspoon pepper

 

Directions

Cook bacon in a 10-qt. stockpot over medium heat 10 to 12 minutes or until almost crisp.

Add onion, and sauté 8 minutes

Add chopped ham and garlic, and sauté 1 minute.

Stir in broth and the rest of the ingredients.

Simmer on low and cover for 1 hour or longer to desired degree of tenderness.
