Asian Slaw with Mango & Edamame

This coleslaw recipe is perfect to spice up your BBQ. It’s so easy to make you can whip it up for a weeknight dinner anytime, and so good for you too!
Ingredients
1 package of coleslaw blend (16 ounces )
2 cups of shelled edamame
3 ripe mangoes peeled and chopped
1 small – medium red onion, sliced thin
1 cup of sliced almonds
fresh organic cilantro chopped
Dressing
- 3 tablespoons olive oil
- 1 tablespoon toasted sesame oil
- ¼ cup rice wine vinegar
- 2 tablespoons honey
- 1 tablespoon low sodium soy sauce
- 1 garlic clove, finely minced
- 1 tablespoon ginger, finely chopped
- ½ teaspoon salt
Combine Dry Ingredients in a large mixing bowl, set aside and make dressing.
Whisk salad dressing ingredients together in a small bow.
Pour dressing over slaw and mix well.
Add sesame seeds and or rice noodles if you like a little crunch!
