Easy Weeknight Slow Cooker Pulled Pork Sanwiches

Let’s face it, kids are starving when they come home from school and sports practice. It’s challenging to make a healthy meal from scratch every evening and I rely on my slow cooker to help out. These pulled pork sandwiches are delicious and easy! I skip the bun and put a salad on the side for carb free moms and dads!
Ingredients
1 2-2.5 lbs. boneless pork loin
1/3 onion sliced
1 tbsp paprika
1 tsp black pepper
1 tsp salt
8 0z of your favorite BBQ Sauce
3 cloves of garlic, minced or pressed
1/3 cup of water
Add all ingredients to the slow cooker and cook on low for 8 hours.
Shred, stir and serve on top of rolls (Brioche if you can find them)
Pair with coleslaw, pickles and extra bbq sauce on the side!
