Roasted Broccoli and Tofu!

Roasted Tofu with Soy Sauce, Broccoli and Rice

This tofu recipe is so easy, everything cooks in 1 large sheet pan and you have an easy and healthy weeknight dinner!  Serve with brown rice and enjoy!

 

Ingredients

1 large diced onion

1 1/2 pounds of fresh organic broccoli florets

14oz  pack of extra firm tofu, cut in cubes

1 cup your favorite low sodium teriyaki sauce

Hot pepper flakes 


Instrucions

  1. Preheat the oven to 400F. Line a large baking sheet with foil. Spread  the onions evenly and top with broccoli.
  2. Arrange the tofu around the vegetables. Pour the Teriyaki sauce all over and mix gently.  Be careful not to break up the tofu.  Bake for 30 minutes or until broccoli is done
  3. Sprinkle pepper flakes.
  4. Serve with brown rice.
