Taco Soup, Fast & Hearty!

Mexican soup (like chili con carne) with tacos
Ingredients
- 1 pound lean ground beef
- 1 medium diced onion
- 1 1/2 teaspoon chili powder
- 1 teaspoon garlic powder
- 1 teaspoon cumin
- 1/2 teaspoon salt
- 1/4 teaspoon pepper
- 1 (15 1/2-ounce) can pinto or kidney beans
- 1 (14 1/2-ounce) can stewed tomatoes
- 2 cups low sodium chicken broth
- 1 cup frozen sweet corn
Toppings
- black olives, drained and sliced
- corn chips, for toppings
- fresh avacado sliced
- diced tomoatoes
- grated cheese
- chopped green onions
- Pickled jalapenos
- sour cream
Instructions
- Brown the beef and onions in Soup Stock pan over medium heat until browned.
- Add the spices and mix well.
- Add the beans, tomatoes and chicken broth then bring to a boil. Reduce the heat and allow to simmer for about 5 minutes.
- About 1 minute before serving add the corn and bring back to a boil
- Serve with your family’s favorite toppings, yum!
