Taco Soup, Fast & Hearty!

Mexican soup (like chili con carne) with tacos

Ingredients

  • 1 pound lean ground beef
  • 1 medium diced onion
  • 1 1/2 teaspoon chili powder
  • 1 teaspoon garlic powder
  • 1 teaspoon cumin
  • 1/2 teaspoon salt
  • 1/4 teaspoon pepper
  • 1 (15 1/2-ounce) can pinto or kidney beans
  • 1 (14 1/2-ounce) can stewed tomatoes
  • 2 cups low sodium chicken broth
  • 1 cup frozen sweet corn

Toppings

  • black olives, drained and sliced
  • corn chips, for toppings
  • fresh avacado sliced
  • diced tomoatoes
  • grated cheese
  • chopped green onions
  • Pickled jalapenos
  • sour cream

Instructions

  1. Brown the beef and onions in Soup Stock pan over medium heat until browned.
  2. Add the spices and mix well.
  3. Add the beans, tomatoes and chicken broth then bring to a boil. Reduce the heat and allow to simmer for about 5 minutes.
  4. About 1 minute before serving add the corn and bring back to a boil 
  5. Serve with your family’s favorite toppings, yum!
