Yummy Thai Peanut Noodle Salad

A cold asian noodle salad on a white plate with chopsticks.


This Cold Thai Noodle Salad is yummy and a family favorite.  


• 4 oz  spaghetti

• 1/2 cup peanut sauce

• 1/3 cup sliced cucumber

• 1/3 cup edamame, thawed

• 2 green onions, thinly sliced

• 1 tbsp roughly chopped cilantro

• 1 tbsp roasted peanuts, chopped

Cook spaghetti in salted, boiling water until al dente and immediately drain and cool under cold water. Toss cooked spaghetti with Thai peanut sauce, cucumber, edamame, and green onions. Garnish with cilantro and peanuts.

Peanut Sauce:

• ¾ cup water

• ½ cup organic creamy peanut butter

• 1/3 cup lime juice

• 1 ½ teaspoons minced ginger

• 1 ½ teaspoons minced garlic

• ½ teaspoons kosher salt

Place all ingredients in a microwave-safe bowl. Heat on high for one minute. Stir until creamy and emulsified.
