Recipe: Strawberry & White Chocolate Cookies

HOW TO MAKE STRAWBERRY & WHITE CHOCOLATE COOKIES

I’ve been on a cookie kick lately. I wanted to try something different so I thought I would make some strawberry cookies. I’m not a huge strawberry fan, but I thought that if I paired it with a white chocolate ganache, that it would be amazing!

This recipe is SUPER easy and can be done in less than 30 minutes. I also made a huge mistake, so LEARN FROM ME!

Here is what you’re going to need:

  • 1 15.25 ounce box strawberry cake mix

  • 1/2 cup vegetable oil

  • 2 large eggs

  • 1/2 cup white melting wafers (Which is what I used)

  • Heavy cream & White chocolate chunks (This is what I used. I’ll tell you why this wasn’t a good idea later)

INSTRUCTIONS

  • Preheat your oven to 350°F. Grease some parchment paper and get out that baking sheet tin.

  • Mix together the cake mix, oil and eggs in a large bowl.

  • I put the batter in the refrigerator for 15 minutes so that it would be easier to work with.

  • I used a cookie scoop, but you can use a spoon to make little balls of the dough. Place the dough on the cookie sheet and bake for 9-11 minutes. I took my cookies out after 9 minutes and they were very chewy. The next batch I left in for 11 minutes and they were crispier. So leave them in for your desired texture.

  • At this point you want to melt your white chocolate wafers and dip your cooled cookies in them. Then you can decorate with sprinkles.

I decided to make a ganache, and that’s when everything went wrong. I mixed warm heavy cream with my white chocolate. It tasted great and I thought that meant I was ready to go.

Spoiler alert: I was not.

I didn’t let the ganache sit and therefore, it was still runny. When I dipped my cookies, It didn’t create that stark white and pink contrast. It looked like this.

Pretty sad, right? And the ganache went EVERYWHERE! It ran right off the cookie and on to my counter.

So I let the ganache cool a bit and dipped the rest, and then they turned out okay.

If you’re going to make this recipe, I recommend using white chocolate melting wafers. They will be easier to work with and not nearly as messy.

It’s what I get for trying to be fancy!
